Risk analysis based on advanced information and forecasting tools has a fundamental role in food safety when events occur that couldn’t have been predicted through the usual process analysis techniques. During this executive course some forecasting and analysis techniques will be presented – e.g. ORM – FMEA and HAZOP - applied both to productive processes and to the organization of a major event. Organizing one of these latter implies a number of critical issues including organization, prevention and protection: from preparing meals for athletes and guests to dealing with traditional health aspects and to bioterrorism and tampering. The course will give a detailed insight to the model applied during the Turin Winter Olympics in 2006, from supplying meals to health care management.
